    For a lighter, yet still creamy and comforting chili, try this healthy white chicken chili. It’s packed with protein, fiber, and veggies to make it a nutritious one-pot meal.


    • 1 lb boneless, skinless chicken breasts, diced
    • 1 yellow onion, diced
    • 3 cloves garlic, minced
    • 1 red bell pepper, diced
    • 1 jalapeño, seeded and minced
    • 1 tbsp olive oil
    • 1 tbsp chili powder
    • 1 tsp cumin
    • 1 tsp oregano
    • 1/4 tsp cayenne pepper (optional)
    • 3 cups low-sodium chicken broth
    • 2 (15 oz) cans cannellini beans, rinsed and drained
    • 1 (14.5 oz) can fire-roasted diced tomatoes
    • Juice of 1 lime
    • Chopped cilantro, avocado, Greek yogurt for topping


    1. In a large pot, heat olive oil over medium heat. Cook chicken 5 minutes until browned.
    2. Add onion, bell pepper, and jalapeño. Cook 5 minutes until tender.
    3. Add garlic, chili powder, cumin, oregano and cayenne. Cook 1 minute.
    4. Pour in chicken broth, beans, and tomatoes. Bring to a boil.
    5. Reduce heat and simmer 15 minutes.
    6. Remove from heat. Stir in lime juice.
    7. Serve chili topped with cilantro, avocado, and Greek yogurt.


    • Try substituting the chicken with chickpeas or white beans for a vegetarian version.
    • Garnish with avocado, cheddar cheese, or sour cream.
    • Swap different beans like great northern or cannellini.
