    White Chicken Chili in the Instant Pot

    The Instant Pot is a versatile kitchen appliance that can be used to make all kinds of dishes quickly and easily. One recipe the Instant Pot excels at is white chicken chili. With just a few simple ingredients and minutes of prep time, you can have a steaming bowl of creamy, comforting chili ready in no time.


    • 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
    • 1 medium onion, diced
    • 3 cloves garlic, minced
    • 1 (4 ounce) can diced green chiles
    • 1 1/2 teaspoons ground cumin
    • 1 teaspoon dried oregano
    • 1/2 teaspoon salt
    • 1/4 teaspoon black pepper
    • 3 (15 ounce) cans cannellini beans, rinsed and drained
    • 4 cups chicken broth
    • 1 cup frozen corn
    • 1/4 cup fresh cilantro, chopped


    1. Turn the Instant Pot to the saute setting and add a bit of oil or cooking spray. Add the chicken pieces and cook for 3-4 minutes, stirring occasionally, until starting to brown.
    2. Add the onion and continue cooking for another 3-4 minutes until the onion softens. Add the garlic, green chiles, cumin, oregano, salt and pepper and stir to combine.
    3. Add the beans, chicken broth and corn. Secure the lid and set the pressure release to sealing. Select the manual/pressure cook setting at high pressure for 8 minutes.
    4. Once cooking is complete, use a natural pressure release for 10 minutes then switch the valve to quick release.
    5. Remove the lid and stir in the fresh cilantro. Adjust seasonings to taste.

    Serving Suggestions:

    • Garnish bowls of chili with shredded cheese, diced avocado or sour cream.
    • Serve with tortilla chips, cornbread or saltine crackers.
    • Top with crunchy toppings like tortilla strips, crushed tortilla chips or chopped green onions.
